ZUCCHINI BRAN BREAD 
3 c. flour
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/4 tsp. ginger
1 1/4 c. sugar
1 1/2 c. bran cereal - crispy squares, crushed to 1/2 c.
1/4 c. nuts, chopped
2 eggs, beaten
1/2 c. milk
1/3 c. vegetable oil
2 c. zucchini, grated

Preheat oven to 350 degrees. Grease a 9 x 5 x 3-inch loaf pan.

Sift first set of ingredients. Stir in crushed cereal and nuts. Combine in bowl, eggs, milk, oil and zucchini. Add mixture to dry ingredients until moistened.

Pour into greased loaf pan and bake 65 to 75 minutes at 350 degrees or until tester comes out clean. Let cool 15 minutes before removing from pan.
