ZUCCHINI BREAD 
1 c. sugar
1/2 c. oil
2 eggs
1/2 tsp. orange juice
1 1/2 tsp. orange rind
1 tsp. vanilla
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/8 tsp. nutmeg
1 c. shredded zucchini
1/2 c. nuts

Mix well, similar to a pumpkin bread recipe.

Bake in a preheated 350°F for 1 hour in a greased and floured bread pan.
