ZUCCHINI CITRUS BREAD 
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 c. sugar
1/2 c. apple sauce
2 eggs, beaten
1 c. grated zucchini
1 tsp. grated lemon peel
1/2 c. fresh orange juice
1/2 c. chopped walnuts, optional
1/2 c. raisins, optional

Sift together all dry ingredients except sugar. Set aside. Mix together sugar, apple sauce, eggs, zucchini and orange juice. Add dry ingredients, beating well. Add nuts and raisins.

Pour into buttered and floured bread pan and bake at 350 degrees for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on rack 10 minutes before removing loaf.

You could also spray Pam in muffin tins and bake at 350 degrees for 25 minutes or until muffin springs back when touched.
