ZUCCHINI BREAD 
2 c. sugar
1 c. vegetable oil
3 eggs
2 tsp. vanilla
2 c. shredded zucchini
1/2 c. applesauce
1/4 c. plus 1 tbsp. orange juice
3 c. flour
2 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chopped nuts

Combine sugar, oil, eggs and vanilla in large bowl. Beat at medium speed until well mixed. Add zucchini, applesauce and orange juice. Combine flour and next 5 ingredients. Add to zucchini mixture, stirring well.

Pour into two greased and floured 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for about 1 hour or until a toothpick stuck in the center comes out clean. Let cool in pans 10 minutes. Let loaves cool on wire rack.
