ZUCCHINI BREAD | |
3 eggs 1 c. cooking oil 2 tsp. vanilla 2 c. sugar 2 c. grated zucchini, including rind 2 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 pkg. butterscotch instant pudding 1 c. finely chopped nuts 1/2 tsp. ginger 1/2 tsp. nutmeg 1/4 tsp. baking powder 1/2 c. oats Beat together eggs, oil, vanilla, sugar and zucchini. Add flour, soda, salt, cinnamon, ginger, nutmeg, baking powder and oats. Add butterscotch instant pudding with 1 cup finely chopped nuts. Bake at 350 degrees in 2 greased and floured bread pans. Bake 1 hour or until done. for variation: different puddings such as banana, pistachio, cherry or chocolate may be used. |
