ZUCCHINI BREAD 
1 c. salad oil
2 1/4 c. sugar
3 eggs
2 c. grated zucchini
3 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
1 tsp. vanilla
1 c. chopped nuts

Mix salad oil, sugar, eggs, and zucchini together. Add the remaining ingredients and blend well. Grease and flour 2 loaf pans. Pour 1/2 mixture into each pan.

Bake at 325°F for 1 hour.

Makes 2 loafs.
