HASH BROWN CASSEROLE 
1 lb. hash browns, frozen
1/2 c. onion
4 oz. Cheddar cheese, shredded
1/2 stick butter, melted
1 can chicken soup
1 (8 oz.) sour cream

TOPPING:

About 30 Ritz crackers, crushed
1 stick butter, melted

Mix all ingredients and add potatoes, cook in casserole dish at 325 degrees for 1 hour. Topping: Mix well and put over casserole and cook about 10-15 minutes, more until brown.
