TWICE BAKED SQUASH 
2 acorn squash baked at 350 degrees for 45-60 min.
1 (10 oz.) frozen spinach, thawed & drained
3/4 c. Parmesan
2 hard boiled eggs, chopped
1/4 c. melted butter
4 slices crisp bacon, crumbled
2 green onions, chopped
1/8 tsp. red pepper
1/4 c. bread crumbs

Scoop out squash, leaving 1/4 inch hull. Mix all ingredients together except crumbs. Place mixture in hulls, sprinkle with crumbs. Bake at 350 degrees for 25-30 minutes. Makes 4 entrees or 8 side dishes.
