BEEF GREEN ENCHILADAS 
1 can cream of chicken
1 lb. ground beef
1 tbsp. diced Jalapeno
Corn tortillas
Shredded cheese
Diced onions

Cook ground meat and drain. Set aside. Combine in blender cream of chicken, Jalapeno and blend well. Add to ground meat and cook until boiling, keep on low flame.

Lightly fry corn tortillas and dip into sauce mixture. Place on plate and sprinkle with cheese and onions (optional). Stack to desired portion. Garnish with lettuce and tomatoes. Can be replaced with cooked and chopped chicken.
