PERSIMMON PUDDIN' 
1 1/2 c. persimmon pulp
1 1/2 c. sugar
1/2 tsp. salt
1 1/2 c. buttermilk
1 1/4 c. flour

Rub persimmons through a colander. Then stir all ingredients together. Grease a pan with butter. Bake in a moderate oven. When knife comes out clean remove from oven. This puddin' will fall when taken from oven.
