GREEN BEANS 
1 lb. whole green beans, fresh
2 oz. olive oil
3 tomatoes
1/3 c. onion
1/3 c. bacon, cooked, crumbled
Salt
Pepper

In a large pot, boil green beans for 10 minutes. Drain into a colander and transfer to an ice bath to stop cooking process. Set aside.

Dice tomatoes into 1/2 inch pieces. Cut onions in half and then into thin slices. In a medium size saucepan, heat olive oil and cook onion, tomato and green beans for 3 to 4 minutes over medium heat. Add crumbled bacon and season with salt and pepper to taste.
