VEGETABLE DELIGHT 
3 tbsp. vegetable oil
3 med. potatoes
3 Vidalia onions
3 med. yellow squash
Salt and pepper to taste

Thinly slice all vegetables. Heat oil in large skillet; add potatoes and saute for 5 minutes. Add onions, squash, salt and pepper. Cover and simmer until vegetables are tender. Serves 8.
