CREAM OF BROCCOLI CHEESE SOUP
(FOR MICROWAVE OVEN)
 
2 c. chopped celery
1 c. onion, finely chopped
1 (10 oz.) pkg. frozen broccoli, thawed
1 c. cottage cheese
2 c. milk
1 can cream of chicken soup, undiluted
Salt and pepper, to taste

Cook celery, onion and broccoli in 2 1/2 quart covered casserole in microwave oven on HIGH for 6 minutes, stirring after 3 minutes. Set aside.

Blend cottage cheese very smooth in food processor, slowly adding milk, then the soup. Add this mixture to the cooked vegetables and microwave on HIGH until heated through, about 3 minutes. Add salt and pepper to taste.

Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
