LETTUCE WITH GENOA TOPPING 
1 lb. salami, finely ground
2 c. sour cream
1/2 c. mayonnaise
2/3 c. green onions, finely chopped
1/2 c. chili sauce
1 tsp. salt
24 iceberg lettuce, 3/4" slices
Salad greens, as needed

Combine salami, sour cream, mayonnaise, green onions, chili sauce and salt. Chill. Arrange lettuce slices on salad greens. Top with dressing allowing 1 1/2 ounces per salad. Yield: 24 portions.
