FLUFFY POTATO CASSEROLE 
2 c. mashed potatoes (3 lg.)
1 (8 oz.) pkg. cream cheese, softened
1 sm. onion, finely chopped
2 eggs, well beaten
1 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 (3 oz.) can French fried onion rings, crushed

Combine first 7 ingredients; beat 2 to 3 minutes at medium speed of electric mixer. Pour into greased 1 1/2 quart casserole. Spread crushed onions evenly over top. Bake, uncovered, at 300 degrees for 30-35 minutes. Serves: 4.
