CHINESE SWEET AND SOUR PORK 
1 1/2 lb. spareribs, boneless
3 tbsp. oil or shortening
1 c. water

Cut spareribs into 1-inch pieces; brown in oil or shortening in a large automatic frying pan. Add water; cook, covered, slowly (low) for 1 hour to allow pork to steam to tenderness.

While ribs are steaming, prepare sweet and sour sauce, vegetable mix, and cook rice as described below.

SWEET AND SOUR SAUCE:

1 c. brown sugar
12 tbsp. cornstarch
1 c. vinegar
4 c. pineapple juice
4 tbsp. soy sauce
2 tsp. salt

Combine and cook until thick in microwave or in a saucepan on stove. Stir often. After pork has steamed for 1 hour, pour sweet and sour sauce over ribs and stir well. Let sit covered at very low heat for 10 minutes.

VEGETABLE MIX:

3/4 c. green pepper, cut in long strips
1/4 c. onions, thinly sliced
1 (#2) can pineapple chunks
1 handful snow pea pods
1 sm. can water chestnuts, sliced

After sauce has set with ribs, add vegetables; mix and stir well. Steam at very low heat for about 3 minutes. Serve immediately over cooked rice.

COOKED RICE:

4 c. water
2 tbsp. shortening
2 c. rice
Pinch salt
Since microwave ovens vary in power, you may need to adjust your cooking time.
