CHILI CHEESE GRITS 
4 c. boiling water, salted
1 c. grits
1/2 lb. Velveeta cheese, cubedSm. can chopped green chili (more if you prefer)
1 well beaten egg

Cook grits according to package directions. Stir cheese into cooked grits until melted. Remove from heat; stir in egg and green chili.

Pour into greased casserole and bake at 300 degrees for about 40 minutes. Excellent with Huevos Rancheros!
