GRITS AND CHEESE CASSEROLE 
4 c. boiling water
1 tsp. salt
1 stick butter
1 c. grits
2/3 lb. Velveeta cheese

Cook until cheese melts. Remove from heat and add 2 beaten eggs and 4 dashes of Tabasco sauce. Pour into 2-quart greased baking dish or 9-inch square dish and bake at 275 degrees for 1 hour.

Could sprinkle 1/2 cup grated cheddar cheese on top and bake 10 minutes more.

Could use cheddar cheese or bacon cheese instead of Velveeta.

I used Worcestershire sauce instead (about 1/2 teaspoon) of Tabasco.

Could garnish with chopped parsley.
