BASIC OATMEAL MUFFINS 
1 1/2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1/4 c. butter
1 1/2 c. oats
1 egg
1 1/4 c. milk or buttermilk
1/4 c. honey
1/2 c. dates or apples

Mix dry ingredients together. Cut butter in with a pastry blender until mixture looks like a coarse meal. Stir in oats; blend in eggs, milk and honey. Mix until blended or just moistened. Fill 12 well-greased muffin cups 2/3 full. Heat oven to 400 degrees. Bake about 20 minutes or until done. Makes 12 large muffins.
