MEAL IN A MUFFIN 
2 c. all-purpose flour
1 1/2 c. whole wheat flour
1 c. oatmeal
1 c. sugar
1 c. brown sugar
1 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. raisins
2 tbsp. grated orange rind
2 c. carrots, grated
2 eggs, beaten
1 1/2 c. orange juice
1/2 c. salad oil

Blend flour, oatmeal, sugar, baking powder, baking soda and salt. Add raisins to well coat. Combine grated carrots and orange rind and add to flour mixture. Combine beaten eggs, oil and orange juice. Stir into dry ingredients until well mixed. Fill lined muffin pans to 2/3 full. Bake at 400 degrees F. for 20 minutes. Yield: 24 muffins.
