APPLE OATMEAL MUFFINS 
1 1/2 c. all-purpose flour
1/2 c. whole wheat flour
1 c. oatmeal
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
3 tbsp. sugar
1/4 tsp. cinnamon
1/2 c. golden raisins
2 eggs, beaten
1 c. milk
3 tbsp. frozen apple juice, undiluted
1/4 c. butter, melted
2 lg. apples, peeled and chopped

Stir together all dry ingredients and raisins in large bowl. Beat eggs with milk and apple juice, then beat in butter in smaller bowl.

Combine the two mixtures just until flour mix is moistened. Fold in chopped apples. Bake 400 degrees 15 to 20 minutes. Makes 18 medium muffins.
