THREE CEREAL MUFFINS 
2 c. oatmeal
2 c. Grape Nuts
2 c. Shredded Wheat
2 c. boiling water
3 c. sugar
1 c. shortening (2/3 c. oil)
4 eggs or 8 whites
1 tbsp. salt (optional)
1 qt. buttermilk
5 c. flour
5 tsp. baking soda

Soak cereals in boiling water. Set aside. Cream sugar and shortening. Add eggs, salt and buttermilk. Add flour and soda. Combine with cereal mixture. Bake 20 minutes at 350 degrees. This makes a large batch. Cover and store up to three months in refrigerator.

Muffins were really tender - most successful when baked as a small size because they crumbled when large size. I used a granola w/almond slices)as a sprinkle on top before baking. Also used thinned batter for pancakes - nice, but a bit "fluffy." Making only half recipe was easy and made sense instead of such a large amount of batter. Wish there was a count as to calories or health rating.

I made 1/2, used coconut oil and small muffin cups. Yield was 41 muffins, but they were overflowing.
