APPLE CRUNCH (OR RHUBARB) 
1 c. flour
3/4 c. oatmeal
1 c. brown sugar
1/2 c. butter, melted
1 tsp. cinnamon
1 tsp. vanilla
4 c. sliced apples or diced rhubarb
1 c. sugar
2 tbsp. cornstarch
1 c. water

Mix flour, oatmeal, brown sugar, butter, and cinnamon until crumbly. Press 1/2 of mixture into 9 inch square pan. Cover with fruit. Combine sugar, cornstarch, water, and vanilla until thick and clear. Pour over fruit. Top with remaining crumb mixture. Bake at 350 degrees for 50 minutes.
