BANANA ROLLED OAT COOKIES 
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. nutmeg
3/4 c. butter
1 3/4 c. oats
1 egg, well beaten
1 c. sugar
1 tsp. salt
3/4 tsp. cinnamon
1 c. mashed bananas
1/2 c. nuts, chopped

Sift dry ingredients into bowl, cut in butter and add egg, bananas, oats and nuts. Beat until blended. Drop 1 1/2 inches apart on ungreased cookie sheet. Bake 10 minutes at 350 degrees.

I feel like these would make better muffins, because as a cookie, they look a little weird, but they taste great! I prepared mine with apple sauce instead of butter (saves a lot of fat and adds a nice flavor), raisins instead of nuts (am alergic to nuts), and added a lot more cinnamon than recommended for taste, because I was worried they may have been bland otherwise. And they turned out great! Very quick and easy! They are filling, tasty, and very healthy!
