HEALTHY BANANA COOKIES 
3 large ripe bananas mashed
2 cups of oats
1 cup ripe dates, pitted and chopped
1/3 cup oil

Add all the ingredients into a medium sized bowl and stir well, cover with plastic and let it sit for 15 minutes. after Drop spoonfuls onto an oiled cookie sheet and bake until golden brown and is not liquid when you put the point of a knife through the center. Remove from oven and allow the cookies to cool for five to ten minutes.... ENJOY!

Made these cookies/muffins because they had very little ingredients and healthy. I did substitute the chopped dates for golden raisins. I would like to try the dates next time, but didn't have any on hand. I was skeptical but guessed at the temperature to bake them since it wasn't listed. Used the old standby: 350°F degrees at 10-12 minutes. They are awesome, not sickening sweet or dry..Very "muffiny". I am sure hubby will enjoy these for his breakfast and are baked with no eggs or flours or extra sugars with the exception of the 3 ripe bananas. Will bake them again! I was looking for a new way to use ripe bananas besides the standard banana bread or muffins. I saw this recipe and decided to give it a try. I made it exactly as written. I used old fashioned oats and chopped dates. I baked them for 11 minutes at 350°F on non-stick aluminum foil. They are really good in a healthy way, soft and moist, just sweet enough.
