BANANA CREAM SANDWICH COOKIES 
COOKIES:

2 1/3 c. flour
1 c. sugar
1 c. butter, soft
1/2 c. banana, cut into 1/4 inch slices
1/4 tsp. salt
1 tsp. vanilla
1/2 c. chopped pecans

FROSTING:

3 c. powdered sugar
1/3 c. butter, soft
3 to 4 tbsp. milk
1 tsp. vanilla

Heat oven to 350 degrees. For cookies, in large bowl, combine flour, sugar, butter, banana, salt and vanilla. Beat at low speed until well mixed. Stir in nuts. Shape rounded teaspoonfuls of dough into 1 inch balls. Place 2 inches apart on greased cookie sheet. Flatten cookies to 1/4 inch thickness with bottom of glass dipped in flour. Bake 12 to 15 minutes. Remove to wire racks.

For frosting, in small bowl, combine all frosting ingredients. Beat at medium speed, until light and fluffy. Spread 1 tablespoon over bottoms of half of the cookies. Top with remaining half of cookies.
