BANANA OATMEAL COOKIES | |
1 1/2 c. flour 1 c. sugar 1/2 tsp. baking soda 1 tsp. salt 1/4 tsp. nutmeg 3/4 tsp. cinnamon 3/4 c. tub butter Egg substitute to equal 1 egg 1 c. mashed banana 1 3/4 c. dry oatmeal 1/2 c. walnuts, chopped Combine first 6 ingredients in a large mixing bowl. Add butter, egg substitute and bananas, beating well. Mix in oatmeal and nuts until blended. Drop by teaspoonfuls onto ungreased baking sheet. Bake at 400 F. for 12 to 15 minutes. Remove from pan immediately. (Calories: 74 per 1 cookie) |

I did not have egg substitute or tub butter so I used 1 egg and 1.5 sticks real butter.
I have made banana cookies in the past and I was not impressed by any of them but these cookies are amazingly good! I just cannot stop eating them! They are crispy on the edges and soft in the middle and taste just like Banana Bread to me.
I also adjusted my cooking time to 10-12 minutes depending on how big I was making them but everyone's oven is different so that is to be expected.
