BACON & WILD RICE CASSEROLE 
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 c. celery, chopped
1 lb. bacon
1 pkg. fresh mushrooms, sliced
1 can cream of mushroom soup
1 can cream of celery soup
1/2 tbsp. pimentos, drained & chopped
1/4 c. water
1 (4 oz.) box or bag of wild rice

Cook rice according to directions. Fry bacon until crisp. Reserve 1/4 cup of bacon grease to saute onions, green pepper, celery and mushrooms until tender. Drain and set aside, while mixing soups together. Chop bacon and mix all ingredients together in large casserole. Bake in large casserole pan at 350 degrees for 35 minutes. Medium-high microwave for 15 to 20 minutes. Serves 5.

Since microwave ovens vary in power, you may need to adjust your cooking time.
