BEEF AND BACON CASSEROLE 
10 slices bacon
1 c. onion, minced
2 1/2 lbs. ground beef
2/3 c. stale bread crumbs
2 eggs, lightly beaten
1 tsp. salt
Dash of pepper
2 (10 1/2 oz.) cans mushroom soup
1 c. condensed beef consomme' soup

In a large skillet, cook bacon until crisp. Drain. Pour off all but 2 tablespoons fat. Set bacon aside. Saute onion in the fat until golden. Place ground beef, bred crumbs, eggs, onion, salt and pepper in a large bowl. Mix well. Form into balls (walnut-size.) Brown well in bacon fat. Place meatballs in a 2 quart casserole. Place mushroom soup and consomme' in the skillet. Mix well and heat. Pour over the meatballs. Crumble bacon and sprinkle over the top. Bake at 350 degrees for approximately 45 minutes. Serve over noodles. Can be frozen for later use. 6-8 servings.
