SCALLOPED POTATOES WITH PORK
CHOPS
 
6 pork chops, 1/2 inch thick
Salt and pepper
3 tbsp. flour
1/4 tsp. pepper
2 c. chicken broth
2 tbsp. oil
3 tbsp. butter
1 1/2 tsp. salt
1 med. onion, sliced and separated rings
6 c. sliced pared potatoes

Brown chops on both sides in oil. Sprinkle with salt and pepper. Meanwhile, melt butter in saucepan. Stir in flour, 1 1/2 teaspoon salt and 1/4 teaspoon pepper and chicken broth. Cook, stirring constantly until mixture comes to a boil. Place potatoes in bottom of 7 x 11 x 1 1/2 inch baking dish. Top with onion rings. Pour chicken broth mixture over top. Top with pork chops. Cover with foil. Bake in 350 degree oven for 1 1/2 hours. Remove cover and continue baking 30 minutes until meat is tender.
