ARTICHOKES 
Artichokes

Cut stem off, then peel, chop up stem, keep in cold water, cut 1/4 inch off the other end. Take off the bad leaves. Wash in warm water and salt. Change warm water and salt water 3 times. Soak each time. Take out upside down and let them drain.

STUFFING:

2 c. bread crumbs
Chopped stems and add to bread crumbs
Add chopped onion, garlic powder and oregano
Add salt, pepper and chopped parsley

Put stuffing inside the leaves. Add small can of chopped black olives. Steam them and put in a pan bottom side down, add water. 2 cups of artichokes in the pan. Add oil on the artichokes. Slice onion and add to pan. Simmer 1/2 to 2 hours until tender.
