APRICOT JELLO SALAD 
1 lg. apricot Jello
1/4 c. white sugar
2 tbsp. lemon juice

Mix together and add 1 1/4 cups hot water, stir to dissolve. Add 1 pint (8 oz.) sour cream and 1 large can crushed pineapple and juice. This makes a large salad. Molds very well and holds up in warm weather.

I made this for Thanksgiving,and my family was very impressed! I only used 8 oz sour cream (a pint would be 16 oz), and mixed everything with a mixer on low for about 30 sec. After it congealed, I garnished the top with canned apricot halves. This is an easy, inexpensive, and very tasty sweet salad.
