ZUCCHINI WITH ALMONDS 
1/2 c. chopped onions
1 tbsp. water
1/4 tsp. salt
2 c. zucchini sliced 1/4 inch thick
2 tbsp. toasted sliced almonds
2 tsp. butter
1/2 tsp. dried, crushed marjoram
1/2 tsp. lemon juice
1/4 tsp. pepper
2 tbsp. grated Parmesan cheese

In a 1 1/2 quart microwave safe casserole, cook onion and salt, covered, on 100% power for 2 minutes. Stir in zucchini. Cook, covered, on high for 3 to 5 minutes or until zucchini is crisp-tender, stirring once. Drain.

Stir in the toasted almonds, butter, marjoram, lemon juice and pepper. Cook, covered, on high for 30 to 60 seconds more or until the mixture is heated through. Sprinkle with the grated Parmesan cheese. Makes 4 side dishes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
