CECILLA'S BEST AT-HOME CHICKEN ALFREDO! | |
CHICKEN AND NOODLES: 2 lb. boneless chicken breasts, cut into strips seasonings (your choice) 1 cup all-purpose flour 4 tbsp. (1/2 stick) butter 1 (1 lb.) pkg. fettuccine noodles (Barilla) Season chicken with your favorite seasonings and flour. Cut into 2-inch long strips or how you prefer. Heat a skillet with butter. When melted place chicken inside then cover. About 10 minutes later stir and make sure the chicken is cooking properly. Re-cover and wait another 15 minutes. By then chicken should be done. Set aside. Prepare noodles according to package directions. ALFREDO SAUCE: 1/2 cup (1 stick) butter 6 large garlic cloves, minced 2 cups heavy whipping cream Italian cheeses of your choice* salt and pepper, to taste Note: Parmesan, Romano, Asiago and Mozzarella are among my favorites that I use. Melt butter in a pot. Add minced garlic and simmer till the garlic is soft. Add whipping cream, bring to a simmer. Mix well with salt and pepper to taste (it won’t thicken until mixed with noodles). Drain noodles when they are to your satisfaction. Add chicken and sauce to noodles. Mix and then add 1 cup of cheeses. Mix until it thickens. Add a half cup of cheese to the top of pot and then cover for 5 minutes or until nice and melted. Serve with garlic bread and top with parsley. Hope you enjoy it as much as we do!!!
