1 to 1 1/2 lb. ground beef
1 cup chopped onion
1/3 cup chopped bell pepper (use mixed color for appearance if you wish)
1 cup oatmeal
2 eggs
1 tsp. salt
1 tsp. black pepper
1 1/2 tsp. poultry seasoning
1 tsp. Italian seasoning

Mix all ingredients in bowl, mix well. Place in casserole dish to fit and bake 1 to 1 1/2 hours at 375°F till done using meat thermometer (170°F minimum).

Meat Loaf Topping:

1 1/2 cups ketchup
3 tbsp. brown sugar

Mix ketchup and brown sugar in separate bowl and cover meat loaf with mixture. Continue to bake 20 minutes and then serve hot with mashed potatoes and a veggie side. Very good!
