ROTEL MEATLOAF 
3 lb. ground beef
1 sleeve crushed saltine crackers
1 packet meatloaf seasoning
1 can Rotel
2 to 3 eggs
Ketchup for top of meatloaf

Mix together first 5 ingredients with your hands. Place in a 9x13-inch baking dish. Bake in 350°F oven for approximately 50 to 60 minutes. Top with as much ketchup as preferred about halfway through baking.

Makes 8 to 10 servings.

Switch out the meatloaf seasoning for Lipton onion soup mix & will taste amazing.
