GLAZED LEMON LOAF 
1/2 c. oil
1 c. sugar
2 eggs
1/2 c. milk
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 lemon rind and juice
1/4 c. sugar

Cream oil and sugar, then add eggs. Beat well. Sift together flour, baking powder and salt. Add sifted ingredients alternately with milk to creamed mixture. Add lemon rind. Beat until smooth. Bake in greased and floured loaf pan at 350 degrees for 45 minutes. Meanwhile, mix juice of 1/2 lemon with 1/4 cup sugar. After cake is done, spoon this mixture over the top. (May not need to use the whole thing.) Turn onto wire rack then immediately flip to sugar side up. Tastes best after having been frozen.
