QUICK AND EASY LEMON LOAF 
6 tbsp. butter, softened
1 c. granulated sugar
2 eggs, beaten
1/2 c. milk
1 1/4 c. flour
1/4 tsp. salt
1 tsp. baking powder
Grated rind of lemon

Combine butter and sugar. Beat until light and fluffy. Add eggs and lemon rind. Mix well. Sift flour with salt and baking powder. Add to creamed mixture alternately with milk. Pour into well greased and floured loaf pan. Bake for 1 hour in 350 degree oven.

GLAZE:

1/2 c. sugar
Juice of 1 lemon

Mix 1/2 cup sugar with lemon juice. Mix well and let stand while loaf is in oven. Just before taking loaf from oven spoon glaze over loaf. The loaf will absorb the glaze mix and become moist and very lemony. Cool on rack before removing from pan. To serve - cut in thin slices.

Great for beginners. It came out perfect first time I made it. I hesitated (and held my breath) doing the last part - pouring the liquid over the loaf - but it turned out perfect.
