COUNTRY INN LEMON LOAF 
6 tbsp. butter, softened
1 c. granulated sugar
2 eggs, beaten
1/2 c. milk
1 1/2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking powder
Freshly grated rind of 1 lemon

GLAZE:

1/2 c. granulated sugar
Juice of 1 fresh lemon

Cream butter and sugar. Add eggs and lemon rind. Mix well. Sift dry ingredients and add to creamed mixture, alternating with milk. Pour into greased and floured loaf pan. Bake 1 hour at 350 degrees.

Just before taking pan out of oven, spoon glaze mixture over loaf. It will absorb glaze and become moist. This is great and it freezes well.

I just made this its very easy and very good. I added a cup of fresh blueberries and I found it to be very moist.
