LEMON LOAF 
1/2 cup (1 stick) butter
1 cup sugar
2 eggs
1/2 cup milk
grated rind of 1 large lemon
1/2 cup all-purpose flour
1 tsp. baking powder
1/4 tsp. salt

Preheat oven to 350°F.

Cream butter and sugar. Beat in eggs and milk. Add lemon rind. Stir in mixed dry ingredients. Mix well. Pour into greased loaf pan.

Bake at 350°F for 45 minutes.

LEMON ICING:

juice of 1 lemon
1/4 cup confectioners' sugar

When loaf is hot, pour lemon juice mixed with confectioners' sugar over top.
