PEA, ONION AND BACON SALAD 
1 head lettuce
1/2 c. red onion rings
1/2 or more c. mayonnaise
1 pkg. bacon, cooked crisp
1 pkg. frozen peas, cooked
1 c. diced celery
3 tsp. Parmesan cheese
2 tsp. sugar
2 tsp. lemon juice

Break lettuce into pieces. Layer in a 9x13 inch the lettuce, celery, onion, drained cooled peas. Cover with mayonnaise; cover all lettuce well.

Combine cheese and sugar. Sprinkle on top. Cover with Saran Wrap and refrigerate overnight. Break up bacon and store overnight.

RIGHT BEFORE SERVING: Add bacon and lemon juice. Toss and serve.
