MOM'S DATE PINWHEELS 
1 1/3 c. pitted and chopped dates
1/2 c. sugar
1/2 c. water
1/2 c. chopped nuts
2/3 c. shortening
1 1/3 c. brown sugar, firmly packed
2 eggs, beaten
2 2/3 c. flour
1/2 tsp. salt
1/2 tsp. baking soda

Cook dates, sugar, water, and nuts until thick. Set aside while you cream the shortening and brown sugar; add the beaten eggs. Add flour, salt, and soda to creamed mixture; blend well.

Chill dough thoroughly, then roll into two rectangles 1/4-inch thick. Spread with date filling and roll up like a jelly roll. Wrap in waxed paper and chill until ready to bake.

Slice and place on greased cookie sheet. Bake at 350 degrees until lightly brown. Makes about 5 dozen.
