GRANDMA'S DATE PINWHEEL COOKIES 
DOUGH:

1 c. butter
1 c. dark brown sugar
1 c. granulated sugar
2 eggs, beaten
4 c. flour
1 tsp. baking soda
1/2 tsp. salt

DATE MIXTURE:

1 lb. finely chopped dates
1/2 c. granulated sugar
3/4 c. water
1 c. chopped walnuts

Blend butter, dark brown sugar, and granulated sugar well. Add 2 eggs. Add flour, baking soda, and salt. Mix well and chill for several hours. Roll out, spread with date mixture, roll up and chill again. Boil gently the date mixture for 5 minutes. Remove from heat and add walnuts. Preheat oven to 375 degrees. Slice cookies and bake for 10 minutes (or until nicely browned) on ungreased cookie sheet. Makes 6-7 dozen cookies.
