APPLE BUNDT CAKE 
4 eggs
2 c. sugar
1 c. cooking oil
1/4 c. orange juice
2 1/2 tsp. vanilla
1 c. chopped nuts
3 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt

FILLING:

2 c. thinly sliced apples (I use 3 c.)
3 tsp. sugar
1 tsp. cinnamon

Beat together at high speed for 10 minutes the eggs, sugar, oil, juice and vanilla. Sift dry ingredients together, and add a little at a time. Fold in nuts. Place a third of the batter in a well-greased bundt pan coated with sugar. Arrange 1 cup apples on top and sprinkle with 1 1/2 teaspoons sugar and 1/2 teaspoon cinnamon. Add another 1/3 of the batter, and the remaining apples, sugar and cinnamon. Cover with remaining batter. Bake at 350 degrees for 1 1/2 hours.
