GRAMA'S OLD - FASHIONED SOFT
PUMPKIN COOKIES
 
2-1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. butter, softened
1 1/2 c. granulated sugar
1 c. solid pack pumpkin (Libby's)
1 egg
1 tsp. vanilla extract
Glaze (recipe follows)

In medium bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

In large mixing bowl, cream butter and sugar, add pumpkin, egg and vanilla; beat until light and creamy. Add dry ingredients; mix well.

Drop by rounded tablespoon onto greased cookie sheets. Smooth tops of cookies.

Bake in preheated 350°F oven for 15-20 minutes, or until lightly browned. Cool on wire racks. Drizzle with glaze.

Makes 3 dozen cookies.

GLAZE:

In small bowl, combine 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter, and 1 teaspoon vanilla extract. Blend until smooth.

NOTE: For Variation, stir into batter 1 cup chopped walnuts or raisins.
