DUCK WITH APRICOTS 
4 lb. duck
Salt and pepper to taste
Flour
1 clove garlic
1/2 c. apricot nectar
1/2 c. dried apricots, cut up

Sprinkle duck with seasonings and flour. Place skin side up on a rack in roasting pan and bake at 350 degrees for 1 hour.

Mash garlic and mix with nectar and apricots. Drain fat from duck and from pan. Remove rack from pan; place duck in pan. Pour nectar mixture over duck. Cover and bake for 30 minutes. Serves 4. Duck may be quartered before roasting or left whole.
