DINNER MEAT LOAF 
2 lbs. lean ground beef
1 sm. green pepper (diced)
1 sm. red pepper (diced)
1/2 c. plain dry bread crumbs
1 lg. beaten egg
2 tbsp. chopped fresh parsley
1 1/2 tsp. salt
1/2 tsp. pepper
1 (16 oz.) jar chunky taco sauce

Preheat oven to 350 degrees and grease a 6 cup spring mold (or bundt pan).

In large bowl, combine beef, peppers, onion, bread crumbs, egg, parsley, salt, pepper and 1 cup taco sauce. (Mix well.) Pack mixture into prepared pan. Bake 45 minutes or until juices run clear.

Meanwhile, heat remaining taco sauce. Drain excess liquid from meat. Invert on platter. Cut into 1 inch slices and serve with warm sauce.
