PEANUT BUTTER COOKIE BARS 
1/2 c butter
1/2 c peanut butter
1/2 c sugar
1/2 c brown sugar
1 egg
1 tsp vanilla
1 c all-purpose flour
1/4 tsp salt
1/2 tsp baking soda
1 c rolled oats
1 c semi-sweet chocolate chips

In mixer bowl, beat butter and peanut butter for 30 seconds. Add sugars; beat until fluffy.

Beat in egg and vanilla. Stir together the flour, baking soda and salt. Add to the mixture and beat until blended. Stir in the oats. Spread into a greased 9 x 13-inch baking dish.

Bake at 350 for 20 minutes. Remove from oven. Sprinkle with chocolate chips. Let stand 5 minutes and spread. Cool.

Peanut Butter Icing:

1/2 c powdered sugar
1/4 c peanut butter
3 tbsp milk

Beat all 3 ingredients until well blended. Drizzle this over the chocolate layer.

Makes 30-36 bars.

These are great cookie bars. Easy to make and very good to eat. I was asked for the recipe with my friend's first bite. The frosting for me didn't drizzle...it was a little too thin, so I frosted the bars and put them in the fridge to harden the frosting a bit.

This was great but I used chunks of Snickers candy bar instead of chocolate chips (boring) and I mixed them throughout. Give it a try it was really yummy!
