CORNMEAL CRISPS | |
1 c. flour 1 c. yellow cornmeal 1/2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. cayenne pepper or chili powder 1 lg. egg white 2 tbsp. olive or vegetable oil 1/2 c. ice water Combine flour, cornmeal, baking powder, salt and cayenne pepper or chili powder. In another bowl, beat together egg white, oil and ice water. Pour over flour mixture and stir until well blended. Knead into a ball, set aside under an inverted bowl for 10 minutes. Heat oven to 375 degrees. Grease 2 baking sheets. Divide dough in half and roll out each half onto baking sheets. With a sharp knife, cut into 2 inch squares then cut each square in half diagonally to make triangular crackers. Do not separate. Bake 12-15 minutes. Cool on rack and separate into crackers. Store in a tightly covered container. |
