CORNMEAL MUFFINS 
1 c. yellow cornmeal
1 c. all purpose flour
2 tsp. baking powder
1 tsp. sugar
1/2 tsp. salt
1/4 c. egg substitute or 2 egg whites
1 1/4 c. plain non fat yogurt
1/4 c. vegetable oil
Vegetable cooking spray

Combine cornmeal, flour, baking powder, sugar and salt. Add egg and mix. Add yogurt and mix. Then add vegetable oil mixing well. Pour into muffin pan sprayed with vegetable cooking spray. Bake at 425 degrees for 20 minutes or until golden brown.
